Russian Recipe: Blintsi
(Russian crepes)
1
Combine
2 cups milk with ½ tsp baking soda and bring just to a boil (scalding). Set
aside to cool.

Beat 3 large eggs until foamy and add 1 tbsp
sugar and 1 tsp salt. Add 1 cup buttermilk and blend with a mixer. Add the
scalded milk along with 2 tbsp corn or canola oil.

Sift
together 2 ½ cups all purpose flour with 2 tbsp baking powder and add gradually
to the milk mixture. Taste batter to adjust sugar and salt seasoning.

Heat Teflon pan (or if you have a cast iron
pan) and brush a coating of oil on it. Using a ladle, pour a thin coating of
batter into the sizzling pan and rotate pan to spread it around evenly. Cook
only one side. Fold in half and remove from heat when bubbles are dry.
Replenish the coating of oil on the frying pan after cooking two or three blintsi.

Serve
with a mixture of ½ cup melted butter melted with ½ cup whipping cream brought
to boiling and mixed until blended. Bacon & soft boiled eggs, frozen
strawberries, jams and maple syrup are wonderful with blintsi.

gourmets: Paprikas (Good
with Chicken, but can be made with beef or veal with longer cooking times)
Ingredients:
Allow ½ chicken breast per person, cut into walnut sized cubes; Sauté on medium
heat, in large deep frying pan in butter (1tbsp for each ½
chicken breast, Note: butter achieves the flavour
required); Add ¼ onion
diced for each person and ½ tsp sweet Hungarian paprika for each whole chicken
breast being cooked; When all is browned, add ½ cup flour and ensure all the
chicken is coated with it. Add chicken broth to cover meat (use this for
veal also, but beef broth for beef) and while the broth is still cold, add
enough sour cream (up to one cup), whisked in to give the gravy a light, pastel
orange look for chicken & veal (darker for beef). Simmer chicken for no
longer than 30 minutes, while veal and beef may require 60 to 90 minutes
cooking time.
